A second helping from our Hygge Evening
We hope you enjoyed the first recipe from our Hygge night, like there was any way we couldn’t share another! Here’s the recipe for the Nutmeg Double Cheese Mac.
We told you we’re nice like that.
- 500g Macaroni pasta
- 2 tbsp Dijon mustard
- 250ml Crème fraiche
- 6 tbsp Milk
- ½tsp Nutmeg
- 200g Grated mature cheddar cheese
- 200g Grated double Gloucester cheese
- 2 tbsp Tomato puree
- 125g Spinach
- Salt & pepper to taste
Pre heat oven to 200C/400F/Gas mark 6.
Cook the pasta in salted boiling water until tender.
Meanwhile gently warm through the mustard, crème fraiche, milk, nutmeg and cheese in a saucepan.
Combine the ingredients in an oven-proof dish. Season well, cover and place in the oven for 30-40 minutes or until piping hot.
Double cheese is always comforting – especially in mac cheese. The nutmeg gives it a lovely seasonal twist too. This is real comfort food, with feeling. If you’re having your own Hygge night in, get everyone on the sofa with a movie ready, fire (or heating) on, lights down and serve up in warm bowls.
